Homemade Caramel Apple Ice Cream

Homemade Caramel Apple Ice Cream Recipe
Submitted by 2010 Recipe Contest Winner Kathy Peters.
This ice cream recipe is so epic, we can't believe that Ben and Jerry haven't made it yet!

Ingredients

  • 32 unwrapped Vanilla Caramel Creams®, cut into bite size pieces
  • 1 Cup cream
  • 1 Cup half and half
  • 1 Vanilla bean
  • ½ Cup sugar
  • ½ tsp. cinnamon

  • 1 Cup apple sauté (see recipe)
  • 1 Cup peeled cubed apples
  • ¼ Cup butter
  • ¼ Cup Sugar
  • ¼ tsp. cinnamon

  • 1 Cup Streusel Topping (see recipe)
  • ¾ Cup Oatmeal
  • ¼ Cup Pecans and/or Sliced Almonds
  • ¼ Cup Butter

Instructions

Streusel Topping
Mix the oatmeal and nuts together with the butter. Then toast this in the oven for five

minutes at 400 or until slightly golden brown. Put this aside and let it cool.
 
Apple Sauté
Take the 1 cup of peeled cubed apples the butter sugar and cinnamon and place them all in

a small sauce pan over medium high heat. Sauté until you have the apples slightly softened and the sugar cooked to a
Goetze's® caramel color. Take this aside and allow it to cool.
 
Ice Cream
Mix the 1 Cup of Cream and 1 Cup of half and half, the inside part of the vanilla bean
, ½ Cup sugar, and ½ Tsp. cinnamon in a cold bowl. Make sure the sugar is dissolved. If it is a warm day you may want to put this base into the refrigerator to get super cold.

Otherwise, pour the base in your ice cream maker. When the ice cream is to a soft ice cream consistency pour in the
apple sauté and put in the 24 unwrapped pieces of Goetze's Caramel Creams® cut into bite size pieces. Continue to let it chill in the ice cream maker for five more minutes, then transfer it to the freezer.
 
To serve this scoop out ¼ of the ice cream into a bowl, then put ¼ of the streusel topping on and finally put ¼ of the remaining Vanilla Caramel Creams®, cut into bite size pieces and enjoy.
 
If you don't have an ice cream maker, you can substitute with your favorite brand of vanilla bean ice cream.
